Blueberry/Blue Muffins ~ July is National Blueberry Month

My kids do not like big blueberries in their muffins, so I have found a way to get them to eat them.  We make "Blue Muffins".  I puree the blueberries and then mix them in the batter.  I also made a few for myself with the whole blueberries in the muffin mix.

Blueberry Muffins
2 cups flour
1 tsp salt
1/4 tsp cinnamon
1/2 cup sugar
4 tsp baking powder
1 cup blueberries
1 cup milk
1/2 cup melted butter
2 eggs

Preheat oven to 400 degrees F.  Mix dry ingredients together and then add eggs, melted butter and milk to dry mixture and mix well.  (I poured some of this batter into some muffin liners and added a few whole blueberries for myself.)  Next put your blueberries in a food processor and puree them.  Pour the blueberries into the batter and mix well.  Fill the rest of your muffin liners with the blueberry batter.  Fill liners 3/4 full.  Bake for 20 minutes or until lightly brown.  Makes 18.

Pancake Bar ~ July is National Blueberry Month

At my house, we don't all like our pancakes the same.  Some like them with chocolate chips, others with bananas, blueberries, or butterscotch chips.  I prefer the cinnamon chips in my pancakes.  So in order to please everyone, I make a pancake bar.  I make my pancake batter.  (I use the pancake recipe on the Bisquick box.)  Then I pour the batter on the griddle and add in the toppings each child prefers and then cook as directed.  Last week we enjoyed blueberry pancakes since it is national blueberry month, but of course not all of my kids like blueberries so we made some pancakes with butterscotch chips and everyone was happy.

National Blueberry Month-July

Crumb Berry Pie
Ingredients:
(1) 9 inch deep dish pie shell

  

Filling 
                                                           
4 cups berries (thawed if frozen, these raspberries were picked from our yard)
1/2 cup sugar
1/4 cup water
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teasppon vanilla
1 dash of salt

Topping
1/2 teaspoon cinnamon
1/2 cup brown sugar
1/2 cup flour
1/2 cup oats
1/4 cup butter, melted

Directions:
Prep Time: 15 mins
Total Time: 1 hr

    Preheat oven to 375.
        Mix topping ingredients together, stirring in the melted butter last, and set aside. 
       Cook all the filling ingredients EXCEPT the berries on medium, whisking frequently, until it is well blended and thick (5-7 minutes).   Remove filling from heat and stir in berries.
       Pour filling into pie crust (don't poke the crust with a fork).                                                Crumble topping over filling, completely covering it                                                                  (no berries showing through).  
                   Place pie on a cookie sheet and bake on middle rack of oven for 45 minutes or until done. Let cool for at least 10 minutes, and serve. Optionally, top with whipped cream or vanilla ice cream. Enjoy!
