4 Tbsp Barbeque sauce
4 boneless, skinless chicken breasts
4 small red potatoes, sliced
1/2 cup southwest blend peppers (in frozen vegetables section of grocery store)
salt & pepper as needed
1 cup shredded cheddar cheese
Cut 4 pieces of foil (about 12x12 inches) spray with cooking spray. Place one chicken breast on each piece of foil, top with 1 Tbsp barbeque sauce, 1 sliced red potato, and an 1/8 cup of peppers. Sprinkle with salt & pepper as desired. Fold foil in half and to cover food and make narrow folds along each edge to seal the foil packet. Place on grill and grill for 20 to 30 minutes or until chicken is cooked through. Carefully unseal foil packets and top with 1/4 cup shredded cheddar cheese on each piece of chicken.
